What the anthocyanidins and anthocyanins are?
Anthocyanidins are common plant pigments. They are the sugar-free counterparts of anthocyanins based on the flavylium ion or 2-phenylchromenylium, which is a type of oxonium ion (chromenylium is referred also to as benzopyrylium). They form a large group of polymethine dye. In particular anthocyanidins are salt derivatives of the 2-phenylchromenylium cation, also known as flavylium cation. As shown in the figure below, the phenyl group at the 2-position can carry different substituents.
 
   

The counterion of the flavylium cation is mostly chloride. With this positive charge, the anthocyanidins differ from other flavonoids. Almost 25 kinds of anthocyanidins had been found in nature, their distinct structures are showed in the form below.

Anthocyanins (also anthocyans; from Greek: ἀνθός (anthos) = flower + κυανός (kyanos) = blue) are water-soluble vacuolar pigments that may appear red, purple, or blue depending on the pH. Anthocyanins occur in all tissues of higher plants, including leaves, stems, roots, flowers, and fruits. And then, plants are endued colorful sense of sight. The anthocyanins, anthocyanidins with sugar group(s), are mostly 3-glucosides of the anthocyanidins. The anthocyanins are subdivided into the sugar-free anthocyanidin aglycones and the anthocyanin glycosides. Anthocyanins are derived from anthocyanidins by adding sugars.
That is rare to find substantive anthocyanidins in nature. As of 2003, more than 400 anthocyanins had been reported while more recent literature (early 2006), puts the number at more than 550 different anthocyanins.
Anthocyanins belong to a parent class of molecules called flavonoids synthesized via the phenylpropanoid pathway; they are odorless but flavorful, contributing to taste as a moderately astringent sensation.Most frequently occurring in nature are the glycosides of cyanidin, delphinidin, malvidin, pelargonidin, peonidin, and petunidin. Radish red belongs to the glycosides derivatives of pelargonidin (Pelargonidin-3-sophoroside,5-glucoside), which with disacyl structure. They are natural pigments be used in food and cosmetics processing industry widely.

When crushing the raw material, glucosinolates will occur self-decomposition reaction or react with myrosinase within plants generating a series of hydrolysate. Limitation of Solubleness
