The main source of inluin is  Jerusalem artichoke, it is the only natural prebiotics, at the same time, it is almost the only alternative to fat natural water-soluble dietary fiber, it can improve intestinal health and treating constipation, promote calcium, magnesium and other minerals absorption, increase satiety, is good for weight control.Inulin has been applied in health care products, functional food, dairy products, functional beverages, baked food, sugar, and many other health field, current global demand of inulin is about 0.3 million tons. The expected demand of inulin up to 0.5 million tons in 2018.

Inulin added in the diet can promote the absorption of minerals such as calcium and magnesium. In the colon, natural microbial fully fermenting inulin into lactic acid and short chain fatty acids (SCFAs).
